Does this look like a legitimate 1W laser? Would it be difficult to add a potentiometer in the power output wiring to the diode to make it have a range of 500mw to 1000mw?

It's probably a 1W 850nm like it says, it's the dpss 532 they tend to lie about.
The little blue rectangle on the driver board is a pot.
What do you need 850nm for ?
